This recipe should not intimidate you not-so-health conscious peeps at all because this just tastes like dessert to me. If you have an affliction to the texture of tapioca, then this probably isn’t for you. The chia seeds, when soaked over night, transform into these small gel-like balls similar to tapioca. This recipe is packed with protein and not only delicious but good for you too. You can make a chocolate version if you’d like but just mixing in a tablespoon of cocoa powder with the almond milk. You can also use coconut milk if you’d like. So many different combinations, the sky’s the limit.
I had recently gone to the Heart of the City Farmer’s Market at the UN Plaza in downtown San Fran and picked up some really affordable fruits and locally made vegan granola and honey. These ingredients inspired me to make this parfait and I thought I would share with you.
This is perfect for either a healthy breakfast, snack, or even dessert.
Here’s what you’ll need:
2/3 cups chia seeds
2 cups unsweetened almond milk, or milk of choice
1/2 teaspoon vanilla bean paste or pure vanilla extract – if you can get your hands on vanilla bean paste use it!! It is like liquid crack!! Also vanilla extract contains alcohol and I’m looking to avoid that for my breakfast unless it’s in the form of champagne
granola
fresh cut fruit and berries
honey
In a glass jar mix together all ingredients and shake. Place in refrigerator overnight.
In a tall glass or mason jar layer the ingredients starting with the chia pudding, fresh cut fruit, drizzle honey, granola, and repeat one more time.

The chia pudding is good for only a couple of days then you’ll have to discard and start over.

Chia seeds are one of those healthy ingredients that can often be intimidating. That’s certainly not the case with these parfaits! They’re not only healthy, but also delicious.
