Baked Sweet Potato Fries


sweetpotato1This healthy side is a perfect marriage between the good fats from the olive oil and all the vitamins packed in sweet potatoes. You can serve this with with any burger, sandwich or for your next barbecue. What I like about this side is that it is really versatile. You can change your seasonings depending on your mood. You can do sweet & spicy, salt & pepper, or savory. You can even do a trio of fries baking them on their separate baking sheet and presenting them with parchment paper in a mason jar or small glass. It would be really cute to label each flavor with a piece of paper and tie it to the mason jar with twine.

Here’s what you’ll need:

2-3 large sweet potatoes

1-2 tablespoons extra virgin olive oil

salt and pepper

Sweet & Spicy:

1 teaspoon brown sugar

1 teaspoon salt

1/4 teaspoon chili powder

pinch of cayenne pepper

Savory:

1/2 teaspoon paprika

1/2 teaspoon garlic powder

salt & pepper

Sweet:

Top with sifted powder sugar and cinnamon and drizzle with honey after removing from oven

Preheat the oven 425 degrees Fahrenheit. Peel the skin off the sweet potatoes and slice into 1/4 inch fries. Be careful slicing because sweet potatoes are really firm so it can be hard to cut into them. Place on a rimmed baking sheet and drizzle 1 tablespoon of olive oil and season with your choice of seasoning options. Bake for 20 minutes or until golden and crispy, gently turning once. Be sure to remember to turn them so both sides are crispy, if not your going to get limp fries. Serve with your choice of dipping sauces like siracha mayo (literally siracha and mayo mixed together) or just plain ketchup.
