1/2 tbls butter
1 1/3 Cups rice
2-3 limes
2 cups of water
1 tsp salt
4 tbls minced cilantro
Melt butter on med heat. Add rice and juice of one lime and stir cooking for about 1 minutes.
Add water and salt and bring to boil.
Reduce to simmer and cover for 20-25 minutes until rice is fully cooked. Resist the urge to peek under the lid while cooking. You need to keep that steam going. Trust your instincts. In no time you can lift the lid and it’s like magic! You’ll have perfectly cooked rice!
Remove from heat and add cilantro and squeeze last two limes over rice and fluff.
Serve as a side or in a your Chipotle burrito bowl.
