Ditch the Bisquick for these Buttermilk Pancakes


blogpancakes6Usually the morning of gameday Scott requests the “Lumberjack Breakfast” or I like to call it the “Hungryman Breakfast” and these pancakes are the number one staple to this breakfast! For the longest time he would only want Bisquick pancakes that I would doctor up with buttermilk, vanilla, sugar, and some baking power & soda. After traveling all over the place I realized that not all grocery stores carry that particular mix, most stores carried the “Just Add Water” mix and we aren’t down for that in this house! So I forced myself to test out pancake recipes until it was approved by the man and this is what I got! These are sweet, fluffy, melt in your mouth pancakes and this recipe is good for two people so if you have a big family, you might want to double or triple it! Unless you have a Lumberjack in the family and then this is probably only good for one Lumberjack/Hungryman!!!

Here’s what you’ll need:

1  1/4 cup all purpose flour (preferably King Arthur Flour)

1/4 cup sugar

1 teaspoon baking soda

1 teaspoon baking powder

pinch of salt

1  1/4 cup buttermilk

1/4 cup oil (vegetable or canola oil)

2 teaspoons pure vanilla extract

1 large egg

In a large bowl or mixer combine all ingredients together until smooth. Let the batter rest for 5blogpanckaes2 minutes after mixing, this is when I start to heat a large skillet (non-stick or regular is up to you)  on medium heat. You don’t want it too high because these babies will burn! Trust me! Learn from my mistake! I like to sacrifice the first pancake to test out how hot the pan is and see if I’m at the proper temperature without burning the pancake and having a raw interior.

Lightly spray your pan with non-stick cooking spray and slowly ladle the pancake batter to desired sizes. Flip once you see bubbles starting to form on the top and the pancake is a beautiful golden color. Cook each side around 3 minutes depending on your stovetop. Remove from heat and top with a pad of butter and your choice of maple syrup.

You can also add toppings to these pancakes as well like chocolate chips or blueberries. I recommend ladling the batter into the pan then sprinkle with your choice of toppings.
